While no two salad dressing combinations I make are exactly the same, I’ve been riffing on this one for a while. Easy, balanced and let’s my delicious new olive oil from the farmers market shine!
Nutty Cider Vinaigrette
1/4 cup apple cider vinegar
1 tablespoon finely chopped walnuts (or pecans)
1 teaspoon maple syrup
dash curry powder
salt and pepper
1/4 cup olive oil
Mix it all together and coat salad in the deliciousness. *If you’re using kale, I recommend dressing the salad 30 min before serving and keeping in the refrigerator for leaves to soak up some dressing. Add a little extra before serving.
