This recipe is basically healthy fudge. Who doesn’t want pre-workout fudge?? The recipe is from The Toasted Pine Nut, with a few little changes of my own. While these could be made with almond butter, it is hard to deny the deliciousness of peanut butter. It evokes childhood memories of eating dozens of mini Reese’s cups at Halloween and fluffer nutter sandwiches packed in your lunchbox (how good were those?!).
During these times of everything almond, let’s not forget the peanut.
Trust me, you want these in your freezer.
Chunky Chocolate Peanut Butter Bars
1 cup creamy peanut butter
3 tablespoons coconut oil, melted
3 tablespoons maple syrup
1/2 teaspoon vanilla extract
pinch of course sea salt
1/4 cup unsweetened coconut chips
1/2 cup dark chocolate chunks, roughly chopped
1/4 cup flax seeds
1/2 cup dry roasted almonds, roughly chopped
sprinkle of cocoa nibs or extra dark chocolate chunks
Whisk together the first five ingredients until smooth. Stir in the remaining ingredients, except for the cocoa nibs, with a spoon until incorporated. Line a bread pan with parchment paper and pour in peanut butter mixture. Spread evenly and sprinkle with cocoa nibs or chopped chocolate. Harden in the freezer for at least 2 hours, then cut into bars. Store in tupperware in the freezer, or refrigerator if you like them softer.
